I’ve been out of work due to serious health problems for over 2 years now … it’s tough for sure. Leftover Turkey Chili [low-salt]

Turkey day has just passed for our American friends and lots of us eat turkey for over the winter holiday … so I thought this would be a great thing to add so we can use up that leftover turkey! Saw a version of this today on Cheap Health Good food blog. It was a good idea, and with a few little alterations of my own … it becomes even better!

Brownies (low fat, low calorie)

This is a recipe from the back of a box of Splenda (which I was alerted to by ‘La Gourmande Modeste’ french blog), but it has a surprisingly good taste and a soft texture. I made a couple modifications myself and it’s fine. Excellent for diabetics or those who are trying to cut sugar/fat. If you do not have Splenda (or don’t trust it!), you can use regular sugar instead. The use of apple sauce instead of oil will still make this more healthy than a regular brownie, but using real sugar will make it have twice the calories! Gai Pad Ka Prow (Thai Basil Chicken)

This is my take on a traditional Thai dish - made with easy-to-find ingredients. I’ve prepared this as close as possible to how I first fell in love with it … at the Siam Thai restaurant in South Bend, IN. I ate there often. :) NOTE: this is not one of the ‘healthy’ dishes I described earlier, it has quite a bit of salt from the fish sauce and a fair amount of olive oil … but it’s my favourite meal and a nice treat!

Recipes (repost from Jan 2007)

I’ve been wanting to do this for a while … publish some of the food recipes I’ve grown to enjoy over the past two years during my ‘rehabilitation’. hehe. I used to eat a lot of take out food and convenience foods. Living alone, working, and not being concerned enough about my health led me down that path. But since becoming ill with diabetes and liver problems … I have changed my eating habits drastically. I’ve also re-discovered how much I like to cook and try out new things in the kitchen.
