Brownies (low fat, low calorie)

This is a recipe from the back of a box of Splenda (which I was alerted to by ‘La Gourmande Modeste’ french blog), but it has a surprisingly good taste and a soft texture. I made a couple modifications myself and it’s fine. Excellent for diabetics or those who are trying to cut sugar/fat. If you do not have Splenda (or don’t trust it!), you can use regular sugar instead. I’ve been wanting to do this for a while … publish some of the food recipes I’ve grown to enjoy over the past two years during my ‘rehabilitation’. hehe. I used to eat a lot of take out food and convenience foods. Living alone, working, and not being concerned enough about my health led me down that path. But since becoming ill with diabetes and liver problems … I have changed my eating habits drastically. I’ve also re-discovered how much I like to cook and try out new things in the kitchen.
