Gai Pad Ka Prow (Thai Basil Chicken)

This is my take on a traditional Thai dish - made with easy-to-find ingredients. I’ve prepared this as close as possible to how I first fell in love with it … at the Siam Thai restaurant in South Bend, IN. I ate there often. :) NOTE: this is not one of the ‘healthy’ dishes I described earlier, it has quite a bit of salt from the fish sauce and a fair amount of olive oil … but it’s my favourite meal and a nice treat!

Sometime today my website counter crossed the 4000 site hits (8500 page counts). In the grand scheme of things, I guess that’s not a lot for just under 3 years … but it’s not insignificant for sure! Works out to about 4 hits a day. No one is subscribed to my RSS feed except myself (do people actually use this? lol)

Happy birthday to me!

Yup, this day marks another years end on this planet. My 32nd. Wow, writing it out like hat makes me feel old! Truth is, I feel much like I did in my early twenties, except that I can’t drink as much and I complain more. A trend that is sure to continue. lol. Nothing too special planned for the day, I’ll probably bake myself a cake - chocolate with cream cheese icing. I’m a bit unsure about that mixture, but I’m sure it will taste fine since it’s loaded with sugar! Oh, that reminds me, must get my coffee before I get into this.
